  • 2 cups ripe mango, diced about 2 medium mangoes
  • 1 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 medium jalapeño, seeded and minced adjust for spice preference
  • 1 lime juiced
  • 1/2 teaspoon salt to taste

Method
 

Preparation
  1. In a mixing bowl, combine the diced mango, red bell pepper, red onion, cilantro, and jalapeño.
  2. Squeeze the lime juice over the mixture and add salt.
  3. Gently toss all ingredients together until well mixed.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately or refrigerate for up to 1 hour before serving.

Notes
