Ingredients
  

Dry Ingredients
  • 1 cup rolled oats old-fashioned
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup brown sugar packed
Wet Ingredients
  • 1/2 cup maple syrup
  • 1/2 cup milk or non-dairy alternative
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. In a mixing bowl, combine the rolled oats, flour, baking powder, baking soda, salt, and brown sugar.
  3. In another bowl, whisk together the maple syrup, milk, vegetable oil, egg, and vanilla extract.
Mixing and Baking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  3. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  4. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
