Ingredients
  

  • 4 pieces boneless, skinless chicken breasts about 1.5 lbs
  • 3 cloves fresh garlic minced
  • 1/4 cup low-sodium soy sauce
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 8 oz fettuccine or penne pasta
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil for searing

Method
 

  1. Prepare your ingredients by chopping the garlic and sun-dried tomatoes.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then sear until golden brown on both sides (5-7 minutes per side).
  3. Add minced garlic and sun-dried tomatoes to the skillet; sauté for 1 minute until fragrant.
  4. Pour in heavy cream and soy sauce; simmer for about 5 minutes until thickened.
  5. Meanwhile, boil water in another pot and cook pasta according to package instructions until al dente. Reserve some pasta water before draining.
  6. Combine drained pasta with the sauce mixture, tossing until well coated. If needed, add reserved pasta water for desired consistency.
