  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 2 tablespoons matcha powder adjust to taste
  • 2 tablespoons maple syrup or sweetener of choice
  • 1/2 teaspoon vanilla extract
Toppings
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 2 tablespoons coconut flakes optional

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together the coconut milk, almond milk, matcha powder, maple syrup, and vanilla extract until well combined.
  2. Add the chia seeds and stir well to ensure they are evenly distributed.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight until the mixture thickens.
Serve
  1. Once the pudding has set, stir it well and divide it into serving bowls.
  2. Top with mixed berries and coconut flakes if desired.
