Ingredients
  

Chicken and Rice
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup long-grain rice rinsed
  • 2 cups chicken broth low sodium
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 cup corn frozen or canned
  • 1 can black beans drained and rinsed
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh cilantro chopped for garnish

Method
 

Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with cumin, chili powder, garlic powder, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
Adding Vegetables and Rice
  1. Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
  2. Stir in the rice, chicken broth, corn, and black beans. Bring to a boil.
Simmering
  1. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and has absorbed the liquid.
Finishing Touches
  1. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
