Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. Season chicken breasts with salt, pepper, cumin, paprika, and chili powder.
  3. Sauté onions and garlic in olive oil until soft; add seasoned chicken and sear for about 4 minutes per side.
  4. In a bowl, combine cream cheese and milk until smooth; stir in cheddar cheese until melted.
  5. Place chicken in the baking dish and pour cheese sauce over it. Bake for 25 minutes or until chicken reaches an internal temperature of 165°F (75°C).
