Mexican Lasagna with Tortillas

A delicious and hearty Mexican-inspired lasagna made with layers of tortillas, seasoned meat, beans, and cheese.

Ingredients
  

Meat and Beans
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
Tortillas and Cheese
  • 8 pieces corn tortillas
  • 2 cups shredded cheese cheddar or Mexican blend
Sauce
  • 1 can diced tomatoes with green chilies
  • 1 cup sour cream
Toppings
  • 1 cup chopped fresh cilantro for garnish
  • 1 medium avocado sliced, for serving

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add black beans, corn, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
Assemble the Lasagna
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of diced tomatoes on the bottom of a 9x13 inch baking dish.
  3. Layer 4 tortillas over the sauce, followed by half of the meat mixture, half of the sour cream, and half of the cheese.
  4. Repeat the layers, finishing with tortillas, remaining diced tomatoes, and cheese on top.
Bake
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the lasagna cool for a few minutes before slicing. Garnish with cilantro and serve with avocado slices.
