Mexican Pinto Beans

Ingredients
  

Beans
  • 2 cups pinto beans dried
  • 6 cups water for soaking and cooking
Aromatics
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 medium jalapeño seeded and chopped
Spices
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 2 cups vegetable broth or water
  • 1 tablespoon lime juice freshly squeezed

Method
 

Preparation
  1. Rinse the pinto beans under cold water and soak them in water for at least 6 hours or overnight.
  2. Drain and rinse the beans again before cooking.
Cooking
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and chopped jalapeño, and sauté for another 2 minutes until fragrant.
  3. Stir in cumin, smoked paprika, salt, and black pepper, cooking for 1 minute.
  4. Add the soaked pinto beans and vegetable broth. Bring to a boil, then reduce heat to low and cover.
  5. Simmer for about 60 minutes, or until beans are tender. Stir occasionally and add more liquid if necessary.
  6. Once cooked, stir in lime juice and adjust seasoning if needed.

Notes

These beans can be served as a side dish, in tacos, or as a filling for burritos. They also freeze well for later use.
