Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth or vegetable broth
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 cup frozen peas and carrots optional

Method
 

Cooking the Rice
  1. In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  2. Stir in the rinsed rice, cooking for about 2-3 minutes until the rice is lightly toasted.
  3. Add the chicken broth, diced tomato, cumin, chili powder, and salt. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. If using, add the frozen peas and carrots during the last 5 minutes of cooking.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Notes

For added flavor, you can include chopped bell peppers or corn in the rice mixture.
