Ingredients
  

Cinnamon Spiced Apple Filling
  • 3 medium Honeycrisp apples, peeled, cored, and sliced 1/4-inch thick
  • 3 medium Granny Smith apples, peeled, cored, and sliced 1/4-inch thick
  • 2 tbsp dark brown sugar
  • 1 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • 1 tsp pure vanilla extract
Golden Oat Streusel Topping
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup dark brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp kosher salt
  • 1/2 cup unsalted butter, cold and cubed (1 stick)

Method
 

Prep Apples & Mix Streusel
  1. Preheat oven to 350°F (175°C). Toss sliced Honeycrisp and Granny Smith apples with brown sugar, flour, cinnamon, lemon juice, and vanilla extract in a large bowl.
  2. In a separate bowl, whisk oats, flour, brown sugar, cinnamon, nutmeg, and salt. Cut in cold cubed butter with a pastry cutter or fingers until crumbly, pebble-sized clusters form.
Assemble & Bake
  1. Butter a 9x9-inch baking dish. Spread seasoned apples evenly, then scatter the oat streusel mixture across the top in an even, crumbly layer.
  2. Bake at 350°F (175°C) for 42-45 minutes until topping is deeply golden and fruit juices bubble thick around the edges. Rest 10 minutes before serving warm with vanilla ice cream.
