One Pot Lemon Garlic Shrimp and Rice

Ingredients
  

Shrimp and Rice Base
  • 1 lb large shrimp peeled and deveined
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth or vegetable broth
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 medium lemon juiced and zested
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup fresh parsley chopped for garnish

Method
 

Cooking the Dish
  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Stir in minced garlic and paprika, cooking for an additional 1 minute until fragrant.
  3. Add the uncooked rice to the skillet, stirring to coat with the oil and spices.
  4. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and liquid is absorbed.
  6. In the last 5 minutes of cooking, add the shrimp on top of the rice, cover, and allow to steam until shrimp are pink and cooked through.
  7. Remove from heat, fluff the rice with a fork, and season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes
