Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 1 cup orange juice freshly squeezed
  • 1/2 cup pineapple chunks canned or fresh
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons honey
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • 1 teaspoon cornstarch for thickening
  • 1 tablespoon water for cornstarch mixture
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

Prepare the Chicken
  1. In a skillet over medium heat, add a little oil and cook the chicken pieces until browned and cooked through, about 5-7 minutes.
Make the Sauce
  1. In a mixing bowl, combine orange juice, pineapple chunks, soy sauce, honey, ginger, and garlic.
  2. In a small bowl, mix cornstarch with water until smooth, then add to the sauce mixture.
Combine and Cook
  1. Pour the sauce over the cooked chicken in the skillet. Stir well to coat the chicken and bring to a simmer.
  2. Cook for an additional 5-10 minutes, until the sauce thickens.
Serve
  1. Garnish with sliced green onions and sesame seeds if desired. Serve hot over rice or noodles.
