Ingredients
  

Pasta
  • 1 cup orzo pasta uncooked
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium zucchini diced
  • 1 medium bell pepper diced
Herbs and Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup parmesan cheese grated

Method
 

Cooking Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente.
  2. Drain the orzo in a colander and set aside.
Sautéing Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add diced zucchini and bell pepper, cooking for about 5 minutes until softened.
  3. Stir in halved cherry tomatoes and spinach, cooking until spinach wilts, about 2-3 minutes.
Combining Ingredients
  1. Add the cooked orzo to the skillet with vegetables. Sprinkle with oregano, salt, and pepper, stirring to combine.
  2. Remove from heat and stir in grated parmesan cheese before serving.
