Ingredients
  

Pasta
  • 8 oz pasta (fusilli or penne) uncooked
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Herbs
  • 1/4 cup fresh basil chopped
  • 1/4 cup parsley chopped
Cheese
  • 1/2 cup feta cheese crumbled

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss to combine. Add chopped basil, parsley, and feta cheese. Toss gently and serve chilled or at room temperature.
