Ingredients
  

Base Ingredients
  • 4 medium ripe peaches peeled and pitted
  • 2 medium ripe tomatoes cored
  • 1 small cucumber peeled and diced
  • 1 small red bell pepper diced
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 cup vegetable broth or water
  • to taste salt
  • to taste black pepper
Garnish
  • 1/4 cup fresh basil chopped
  • 1/4 cup croutons optional

Method
 

Prepare the Soup
  1. In a blender, combine the peaches, tomatoes, cucumber, red bell pepper, garlic, olive oil, red wine vinegar, and vegetable broth.
  2. Blend until smooth and creamy. If the mixture is too thick, add more vegetable broth to reach desired consistency.
  3. Season with salt and black pepper to taste.
Serve
  1. Chill the soup in the refrigerator for at least 30 minutes before serving.
  2. Serve in bowls and garnish with fresh basil and croutons if desired.
