Method
Make the Pie Crust
- In a mixing bowl, combine flour and salt. Add cold butter and mix until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 30 minutes.
Prepare the Filling
- In a bowl, combine diced peaches, sugar, lemon juice, cornstarch, and cinnamon. Mix well and set aside.
Assemble the Hand Pies
- Preheat the oven to 375°F (190°C). Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into circles using a cookie cutter or a cup.
- Place a tablespoon of peach filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by crimping with a fork.
- Place the hand pies on a baking sheet lined with parchment paper.
- Brush the tops with beaten egg and sprinkle with sugar.
Bake
- Bake in the preheated oven for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
