Ingredients
  

Chia Pudding Base
  • 1/2 cup chia seeds
  • 2 cups almond milk or any milk of choice
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
Toppings
  • 2 medium ripe peaches sliced
  • 1 cup Greek yogurt plain or vanilla
  • 1 tablespoon cinnamon optional

Method
 

Prepare Chia Pudding
  1. In a mixing bowl, whisk together chia seeds, almond milk, maple syrup, and vanilla extract until well combined.
  2. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
Assemble the Pudding
  1. Once the chia pudding has thickened, layer it in serving glasses with Greek yogurt and sliced peaches.
  2. Start with a layer of chia pudding, followed by Greek yogurt, and then top with peaches.
  3. Repeat the layers until the glasses are filled.
  4. Sprinkle with cinnamon if desired and serve immediately or refrigerate until ready to serve.
