Ingredients
  

Coleslaw Base
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup fresh pineapple chunks can use canned if fresh is unavailable
  • 1/2 cup red bell pepper diced
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, pineapple chunks, and diced red bell pepper.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the vegetable mixture and toss until everything is well coated.
Chill and Serve
  1. Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes
