Ingredients
  

Rice and Shrimp
  • 2 cups cooked jasmine rice preferably day-old
  • 1 lb shrimp peeled and deveined
Vegetables and Pineapple
  • 1 cup pineapple chunks fresh or canned
  • 1 cup peas and carrots frozen mix
  • 1 small red bell pepper diced
  • 1 small green onion sliced
Sauce
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
Seasoning
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 1 tbsp vegetable oil for frying
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Heat vegetable oil in a wok over medium-high heat.
  2. Add minced garlic and ginger, stir-fry for about 30 seconds until fragrant.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Add peas, carrots, red bell pepper, and pineapple; stir-fry for another 2-3 minutes.
Cooking
  1. Add the cooked rice to the wok, breaking up any clumps.
  2. Pour in the soy sauce, oyster sauce, fish sauce, and sesame oil; mix well.
  3. Stir-fry everything together for about 5 minutes, ensuring the rice is heated through.
  4. Season with salt and pepper to taste, and add sliced green onions before serving.

Notes

For best results, use day-old rice as it is drier and will fry better.
