Pineapple Upside-Down Cake

Ingredients
  

Topping
  • 1 can sliced pineapple in juice, drained
  • 1/2 cup brown sugar packed
  • 1/4 cup butter melted
  • 10 slices maraschino cherries optional
Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk whole or 2%
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 large egg

Method
 

Prepare the Topping
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine melted butter and brown sugar until smooth.
  3. Pour the mixture into the bottom of the cake pan.
  4. Arrange the pineapple slices over the sugar mixture and place a cherry in the center of each slice if using.
Make the Cake Batter
  1. In another bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix milk, vegetable oil, vanilla extract, and egg until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Bake the Cake
  1. Pour the cake batter over the pineapple topping in the pan.
  2. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool for 10 minutes, then invert onto a serving plate.
