Ingredients
  

Rice Base
  • 1 cup basmati rice rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
Pomegranate Mixture
  • 1 cup pomegranate seeds
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon lemon juice

Method
 

Cook the Rice
  1. In a medium pot, combine the rinsed basmati rice, water, olive oil, and salt. Bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
Prepare the Pomegranate Mixture
  1. In a frying pan, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, cumin, and cinnamon. Cook for another 2 minutes until fragrant.
  3. Stir in the pomegranate seeds, parsley, and lemon juice. Cook for an additional 2-3 minutes.
Combine and Serve
  1. Fluff the cooked rice with a fork and gently fold in the pomegranate mixture.
  2. Serve warm in a serving dish, garnished with extra pomegranate seeds and parsley if desired.
