Rhubarb Coconut Bars

Deliciously tart rhubarb combined with sweet coconut in a chewy bar.

Ingredients
  

Base
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter melted
  • 1 large egg
Filling
  • 2 cups rhubarb chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Method
 

Prepare the Base
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine flour, sugar, coconut, and melted butter. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish.
Make the Filling
  1. In another bowl, combine chopped rhubarb, sugar, cornstarch, and vanilla extract. Mix well.
  2. Spread the rhubarb mixture evenly over the base in the baking dish.
Bake
  1. Bake in the preheated oven for 30 minutes or until the rhubarb is tender and the top is lightly golden.
  2. Remove from the oven and let cool before cutting into bars.
