Rhubarb Panna Cotta

Ingredients
  

Panna Cotta Base
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 packet gelatin about 2 1/4 teaspoons
  • 3 tablespoons cold water for blooming gelatin
Rhubarb Compote
  • 2 cups rhubarb, chopped
  • 1/2 cup sugar
  • 1 cup water
  • 1 tablespoon lemon juice

Method
 

Prepare the Panna Cotta
  1. In a saucepan, combine heavy cream and sugar over medium heat until sugar dissolves. Do not boil.
  2. In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.
  3. Once the cream mixture is warm, remove from heat and stir in the bloomed gelatin and vanilla extract until fully dissolved.
  4. Pour the mixture into ramekins and refrigerate for at least 4 hours until set.
Make the Rhubarb Compote
  1. In a saucepan, combine rhubarb, sugar, water, and lemon juice. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 10 minutes until rhubarb is tender and the mixture thickens slightly.
  3. Remove from heat and let cool. Strain if desired for a smoother texture.
Serve
  1. Once the panna cotta is set, top with rhubarb compote before serving.

Notes

For best results, prepare the panna cotta a day in advance and allow it to chill overnight.
