Ingredients
  

Pie Crust
  • 1 each pie crust store-bought or homemade
Filling
  • 2 cups rhubarb, chopped fresh or frozen
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream

Method
 

Prepare the Pie Crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and set aside.
Make the Filling
  1. In a mixing bowl, combine the chopped rhubarb, sugar, and flour. Mix well.
  2. In another bowl, whisk together the eggs, vanilla extract, and heavy cream until smooth.
  3. Pour the egg mixture into the rhubarb mixture and stir until combined.
Bake the Pie
  1. Pour the filling into the prepared pie crust.
  2. Bake in the preheated oven for 40-45 minutes, or until the custard is set and the top is lightly golden.
  3. Allow to cool before serving.
