Rosemary Watermelon Cooler

Ingredients
  

Watermelon Base
  • 4 cups watermelon cubed and seedless
  • 1 cup water cold
  • 2 tablespoons honey optional, adjust to taste
Herbal Infusion
  • 3 sprigs fresh rosemary plus extra for garnish
  • 1 tablespoon lemon juice freshly squeezed
Garnish
  • 4 slices lemon for garnish
  • 4 slices watermelon for garnish

Method
 

Prepare Watermelon Juice
  1. In a blender, combine the cubed watermelon, cold water, and honey. Blend until smooth.
  2. Strain the mixture through a fine mesh strainer into a pitcher to remove pulp.
Infuse with Rosemary
  1. In a small saucepan, bring a cup of water to a boil. Remove from heat and add the rosemary sprigs.
  2. Let the rosemary steep for about 10 minutes, then remove the sprigs and add the rosemary-infused water to the watermelon juice.
  3. Stir in the lemon juice.
Serve
  1. Pour the cooler into glasses filled with ice.
  2. Garnish with lemon slices, watermelon slices, and additional rosemary sprigs.
