Ingredients
  

Chicken
  • 2 pounds boneless, skinless chicken thighs
Sauce
  • 1/2 cup honey
  • 1/2 cup soy sauce low sodium recommended
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon cornstarch optional, for thickening
  • 1 tablespoon water optional, for cornstarch
Garnish
  • 2 tablespoons sesame seeds for garnish
  • 2 scallions sliced for garnish

Method
 

Prepare the Chicken
  1. Place the chicken thighs in the slow cooker.
Make the Sauce
  1. In a bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
  2. Pour the sauce over the chicken in the slow cooker.
Cook
  1. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is cooked through and tender.
Thicken the Sauce (Optional)
  1. If desired, mix cornstarch with water and stir into the sauce during the last 30 minutes of cooking to thicken.
Serve
  1. Shred the chicken with two forks and stir it into the sauce.
  2. Serve over rice and garnish with sesame seeds and sliced scallions.
