Ingredients
  

Eggplant
  • 2 medium eggplants peeled and diced
Spices
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 cup red onion diced
  • 1 cup bell pepper diced
  • 1 cup corn fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped
Tortillas
  • 8 small corn tortillas
Toppings
  • 1 avocado sliced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup sour cream

Method
 

Prepare the Eggplant
  1. Preheat the grill to medium-high heat. Toss the diced eggplant with olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper.
  2. Grill the eggplant for about 15-20 minutes, turning occasionally until tender and slightly charred.
Cook the Vegetables
  1. In a skillet, heat a little olive oil over medium heat. Add the diced onion and bell pepper, and sauté until soft, about 5-7 minutes.
  2. Add the corn and cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
Assemble the Tacos
  1. Warm the corn tortillas on the grill or in a skillet.
  2. Fill each tortilla with grilled eggplant, sautéed vegetables, and top with cilantro, avocado, feta cheese, and sour cream.
