Ingredients
  

Pineapple Salsa
  • 1 medium pineapple peeled, cored, and cut into rings
  • 1 medium red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium jalapeño seeded and minced
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt to taste

Method
 

Grilling the Pineapple
  1. Preheat the grill to medium-high heat. Grill the pineapple rings for about 3-4 minutes on each side until caramelized and grill marks appear.
Preparing the Salsa
  1. Remove the grilled pineapple from the grill and let it cool slightly. Chop the grilled pineapple into small pieces.
  2. In a mixing bowl, combine the chopped pineapple, red bell pepper, red onion, cilantro, jalapeño, lime juice, smoked paprika, and salt. Mix well.
  3. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for up to an hour to allow flavors to meld.
