Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or penne) Choose your favorite type.
Eggplant
  • 1 large Eggplant Cut into cubes.
Vegetables
  • 1 medium Onion Chopped.
  • 4 cloves Garlic Minced.
  • 1 cup Cherry tomatoes Halved.
Spices and Seasoning
  • 1 teaspoon Red pepper flakes Adjust to taste.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil For roasting and sautéing.
Garnish
  • 1/4 cup Fresh basil Chopped.
  • 1/4 cup Parmesan cheese Grated.

Method
 

Roasting Eggplant
  1. Preheat the oven to 400°F (200°C). Toss the cubed eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until golden brown.
Cooking Pasta
  1. While the eggplant is roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
Sautéing Vegetables
  1. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and red pepper flakes, cooking for an additional minute.
Combining Ingredients
  1. Add the roasted eggplant and cherry tomatoes to the skillet. Cook for 5 minutes until the tomatoes soften. Toss in the cooked pasta and mix well to combine.
Serving
  1. Serve hot, garnished with fresh basil and grated Parmesan cheese.
