Ingredients
  

Pasta
  • 12 oz spaghetti or your choice of pasta
Pesto
  • 1 cup spring garlic trimmed and roughly chopped
  • 1/2 cup pine nuts toasted
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup olive oil extra virgin
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground
Toppings
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup fresh basil for garnish

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Make the Pesto
  1. In a blender, combine the spring garlic, pine nuts, Parmesan cheese, lemon juice, salt, and black pepper. Blend until smooth.
  2. With the blender running, slowly drizzle in the olive oil until the pesto is well combined and creamy.
Combine and Serve
  1. In a skillet over medium heat, combine the cooked pasta and pesto. Toss to coat, adding reserved pasta water as needed to reach desired consistency.
  2. Serve topped with cherry tomatoes and fresh basil.

Notes

For a vegan version, substitute Parmesan cheese with nutritional yeast.
