Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons sugar
For the cheesecake filling
  • 8 ounces cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped
For the strawberry topping
  • 1 cup fresh strawberries sliced
  • 2 tablespoons sugar for macerating

Method
 

Prepare the crust
  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  2. Divide the mixture evenly among serving cups and press down firmly to form the crust.
Make the cheesecake filling
  1. In a separate bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add sugar and vanilla extract, and continue to mix until fully incorporated.
  3. Gently fold in the whipped heavy cream until the mixture is smooth and creamy.
  4. Spoon the cheesecake filling over the crust in each cup.
Prepare the strawberry topping
  1. In a small bowl, combine sliced strawberries and sugar. Let sit for about 10 minutes to macerate.
  2. Top each cheesecake cup with the macerated strawberries before serving.
