Ingredients
  

Filling
  • 1 cup cooked rice white or brown
  • 1 lb ground beef or turkey
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
Bell Peppers
  • 4 bell peppers any color
Topping
  • 1 cup salsa for serving
  • 1 cup sour cream optional

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
Make the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. In a mixing bowl, combine cooked rice, black beans, corn, cheese, cumin, paprika, salt, and pepper. Stir in the cooked beef.
Stuff the Peppers
  1. Stuff each bell pepper with the filling mixture and place them upright in a baking dish.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the tops are golden.
Serve
  1. Serve hot with salsa and sour cream on the side.
