Method
Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
Make the Filling
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- In a mixing bowl, combine cooked rice, black beans, corn, cheese, cumin, paprika, salt, and pepper. Stir in the cooked beef.
Stuff the Peppers
- Stuff each bell pepper with the filling mixture and place them upright in a baking dish.
Bake
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the tops are golden.
Serve
- Serve hot with salsa and sour cream on the side.
