Ingredients
  

Tart Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2-3 tablespoons ice water as needed
Almond Cream Filling
  • 1/2 cup almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Topping
  • 3 medium ripe peaches sliced
  • 1 tablespoon honey optional, for drizzling

Method
 

Prepare the Tart Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Stir in egg yolk and enough ice water to form a dough. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the dough and fit it into the tart pan. Prick the bottom with a fork.
  4. Bake the crust for 15 minutes until lightly golden. Remove from oven and let cool.
Make the Almond Cream Filling
  1. In a bowl, beat together almond flour, sugar, and softened butter until smooth.
  2. Add the egg and vanilla extract, mixing until fully incorporated.
  3. Spread the almond cream evenly over the cooled tart crust.
Assemble and Bake
  1. Arrange sliced peaches on top of the almond cream filling.
  2. Bake the tart for an additional 30 minutes until the filling is set and lightly browned.
  3. Allow to cool slightly, then drizzle with honey if desired before serving.
