Ingredients
  

Beef Filling
  • 1 lb ground beef preferably lean
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheese cheddar or Mexican blend
  • 12 pieces corn tortillas small size
Toppings
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup shredded lettuce

Method
 

Prepare the Beef Filling
  1. In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula.
  2. Drain excess fat, then season with salt, black pepper, cumin, and chili powder. Stir in shredded cheese until melted.
Assemble the Taquitos
  1. Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  2. Place a spoonful of the beef filling on each tortilla, roll tightly, and secure with a toothpick if necessary.
Cook the Taquitos
  1. Heat oil in a skillet over medium-high heat. Fry the taquitos until golden brown and crispy on all sides, about 3-4 minutes.
  2. Transfer to a baking sheet lined with paper towels to drain excess oil.
Serve
  1. Serve hot with sour cream, guacamole, salsa, and shredded lettuce on the side.

Notes

For a healthier option, bake the taquitos at 400°F (200°C) for 15-20 minutes instead of frying.
