Ingredients
  

Filling
  • 2 cups cooked chicken shredded
  • 1 cup cheddar cheese shredded
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
Taquito Assembly
  • 12 small corn tortillas
  • 1 cup vegetable oil for frying

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded chicken, cheddar cheese, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well.
Assemble Taquitos
  1. Warm the corn tortillas in a skillet over medium heat until pliable.
  2. Place about 2 tablespoons of the chicken mixture in the center of each tortilla, roll tightly, and secure with a toothpick if necessary.
Fry Taquitos
  1. In a skillet, heat vegetable oil over medium-high heat. Fry the taquitos in batches until golden brown and crispy, about 3-4 minutes per side.
  2. Remove from oil and drain on paper towels.
Serve
  1. Serve hot with salsa, guacamole, or sour cream.

Notes

For a healthier option, bake the taquitos at 400°F (200°C) for 20-25 minutes instead of frying.
