Ingredients
  

Salad Base
  • 4 cups mixed greens such as romaine, spinach, or arugula
  • 1 cup shredded carrots
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1/2 cup red cabbage shredded
  • 1/4 cup green onions sliced
  • 1/2 cup cilantro chopped
Peanut Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon honey or maple syrup for vegan
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 2 tablespoons water to thin the dressing
Toppings
  • 1/4 cup peanuts chopped
  • 1/4 cup sesame seeds

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, shredded carrots, cucumber, red bell pepper, red cabbage, green onions, and cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and water until smooth.
Combine and Serve
  1. Pour the peanut dressing over the salad and toss to combine. Top with chopped peanuts and sesame seeds before serving.

Notes
