Ingredients
  

Pasta and Vegetables
  • 12 oz Pasta (e.g., penne or fusilli) Whole wheat or gluten-free options can be used.
  • 2 cups Cherry tomatoes Halved.
  • 4 cups Fresh spinach Washed and roughly chopped.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 4 cups Vegetable broth Low sodium recommended.
  • 2 tablespoons Olive oil For sautéing.
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black pepper Freshly ground.

Method
 

Cooking the Pasta
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and dried oregano, cooking for an additional minute until fragrant.
  3. Stir in the halved cherry tomatoes and cook for about 3-4 minutes until they start to soften.
  4. Add the pasta, vegetable broth, salt, and black pepper. Bring to a boil.
  5. Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
  6. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  7. Serve warm, garnished with additional olive oil or cheese if desired.
