Ingredients
  

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup softened butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 4 oz dark chocolate, chopped

Method
 

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour and cocoa powder.
  3. In a separate bowl, beat butter and sugar until light and fluffy. Add the egg and vanilla, mixing well.
  4. Gradually incorporate dry ingredients into the wet mixture until combined. Fold in chocolate chips.
  5. Scoop tablespoon-sized dough onto prepared sheets, spacing them two inches apart. Bake for 10-12 minutes or until edges are set.
  6. For the ganache, heat heavy cream until simmering, pour over chopped chocolate, let sit for two minutes, then stir until smooth.
  7. Once cookies cool slightly, spread ganache on half of them and sandwich with another cookie.
