Ingredients
  

Noodles
  • 8 oz Lo Mein noodles or any egg noodles
Vegetables
  • 1 cup Bell pepper sliced
  • 1 cup Carrots julienned
  • 1 cup Broccoli cut into florets
  • 1 cup Snow peas
  • 1 cup Green onions sliced
Sauce
  • 3 tbsp Soy sauce low sodium preferred
  • 2 tbsp Oyster sauce or vegetarian oyster sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Cornstarch mixed with 2 tbsp water
Oil
  • 2 tbsp Vegetable oil for stir-frying

Method
 

Prepare the Noodles
  1. Cook the Lo Mein noodles according to package instructions, drain, and set aside.
Stir-fry the Vegetables
  1. Heat vegetable oil in a wok over medium-high heat. Add bell pepper, carrots, broccoli, and snow peas. Stir-fry for about 5 minutes until vegetables are tender-crisp.
Combine Ingredients
  1. Add the cooked noodles and green onions to the wok. Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together to combine.
Thicken the Sauce
  1. Add the cornstarch mixture to the wok and stir until the sauce thickens, about 1-2 minutes.
Serve
  1. Remove from heat and serve hot, garnished with additional green onions if desired.
