Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- Arrange halved tomatoes cut-side up, onion wedges, and peeled garlic cloves on the sheet. Drizzle with olive oil, salt, pepper, and dried oregano. Roast for 30–35 minutes until tomatoes are blistered and tender.
- Transfer roasted vegetables and all baking sheet pan juices to a large Dutch oven over medium heat.
- Add the vegetable broth, stir well, and bring to a gentle simmer for 10 minutes to merge the flavors.
- Remove from heat. Add fresh basil leaves. Use an immersion hand blender to puree the soup until completely smooth and velvety.
- Stir in the heavy whipping cream and warm gently over low heat for 2 minutes. Taste and adjust salt and pepper.
- Ladle into bowls, top with fresh parmesan, cracked black pepper, extra basil, and crispy croutons. Serve immediately.

Notes
Do not discard the sheet pan juices. They contain concentrated natural caramelized tomato sugars and garlic oil essential for rich flavor.
