Prepare Watermelon Puree
- Blend the watermelon cubes in a blender until smooth. Strain through a fine mesh sieve to remove pulp if desired.
Bloom Gelatin
- In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom.
Combine Ingredients
- Heat the bloomed gelatin in the microwave for about 10 seconds until dissolved. Mix the gelatin into the watermelon puree.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the watermelon mixture until fully combined.
Chill and Serve
- Spoon the mousse into ramekins and refrigerate for at least 45 minutes to set.
- Serve chilled, optionally garnished with mint leaves or additional whipped cream.
