Ingredients
  

Wild Rice Base
  • 1 cup wild rice rinsed
  • 3 cups water
Vegetables
  • 1 cup chopped bell pepper any color
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes halved
  • 1 cup shredded carrots
Protein
  • 1 can chickpeas drained and rinsed
  • 1 cup quinoa cooked
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Toppings
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Wild Rice
  1. In a medium pot, combine wild rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender.
Prepare the Vegetables
  1. While the rice is cooking, chop the bell pepper, cucumber, and cherry tomatoes. Shred the carrots and set all vegetables aside.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooked wild rice, chickpeas, quinoa, and chopped vegetables.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour the dressing over the rice and vegetable mixture and toss to combine.
Serve
  1. Divide the mixture into serving bowls and top with crumbled feta cheese and chopped parsley.
