Ingredients
  

Vegetables
  • 4 medium zucchini sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium potato peeled and diced
  • 4 cups vegetable broth
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon thyme dried
  • 1 tablespoon olive oil for sautéing
Garnish
  • 1/4 cup cream optional, for serving
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add sliced zucchini and diced potato, cook for about 5 minutes, stirring occasionally.
Cook the Soup
  1. Pour in the vegetable broth and add thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes until vegetables are tender.
Blend and Serve
  1. Using a blender, puree the soup until smooth. If desired, stir in cream for a richer flavor.
  2. Serve hot, garnished with fresh parsley.
